“Solea Solea” (Sole): Sing it!

If the “soleá” (type of Flamenco music) is higher the farther it drops, as it was intuitively felt by Caballero Bonald, what can be said of a fish that sits on the bottom to hunt by ambush, using two small eyes, cold and shrewd, that move to the same side in a trick of magic that evolution keeps up its sleeve. Diners’ eyes open like saucers when this marbled jewel reaches their table.

 

A shame that, at the stove, a majority are happy with the bleak grill, common flouring or the dishonour of a meunier. Deep and subtle like the soleá (its name for Linneo), sing it.
